Housed inside a repurposed historic bank—vault and all, Hatchet Brewing Company is shaking things up in Johnston County with bold beers and an even bolder attitude. Well, technically two tastes.
The original Hatchet in Southern Pines has already established itself with its crowd-pleasing flagships and military-influenced names. But now, with “The Vault,” Hatchet’s Selma location is hoping to get the community to come out and have a beer downtown.
And behind the tanks is someone who knows a thing or two about building breweries from the ground up. Thomas Vincent, head brewer at Hatchet, was the original brewer for Compass Rose in Raleigh and spent time with Carolina Brewery—and he’s brought that same creative intensity to Hatchet’s beer lineup.
We sat down with Thomas inside The Vault for a deep dive interview. He opened up about the brewing philosophy behind some of the brewery's biggest beers, how Selma is warming up to strong stouts and Belgian triples, and what makes Hatchet more than just a veteran-themed brand.
